The other point to remember is that bookies have only ever opened incorrectly on an eviction 3 times in the past 5 series - and 2 of those were because something BIG happened in the week (my Victor and Halfass examples)
Every bookie opened with Skabby as favourite to go.
You are correct - they do invest a lot of time and effort before setting odds at the start of each eviction. Therefter it is the bets placed by punters that change the odds over the days.
I'd ask you to take into consideration that most people who bet will also vote.
The the trends in odds changing is usually a very good indicator.
I'd also ask you to consider that the gambling odds are actually now very close to our own TIBB eviction poll which only started tonight as so is likely to be very up-to-date.
