I may be wrong, but 'something in the back of my jaded memory' thinks it the 'e' may be an Americanism? Not too sure.

Scots refer to it without the 'E'. (or rather..... they should).

Yeah Pyr Los Americanos often use the 'e' but its not their fault. Think Bushmills.

According to Wiki (thats whisky without the h and s)

Whiskey or whisky is an anglicization of a Goidelic name (Irish: uisce beatha and Scottish Gaelic: uisge beatha) literally meaning "water of life". Earlier anglicizations include usquebaugh, usquebea (1706) and iskie bae (1583).

First written records of its production actually come from Ireland, so maybe they have the right to insist on it being spelled with an 'e'.

PMSL, I dont really care how it is spelt, so long as it tastes ok, preference for either Irish or Scottish is dependant on mood.

The real bugbear I have is when people call Scottish people, objects etc Scotch.
