Whiskey or whisky is an anglicization of a Goidelic name (Irish: uisce beatha and Scottish Gaelic: uisge beatha) literally meaning "water of life". Earlier anglicizations include usquebaugh, usquebea (1706) and iskie bae (1583).

First written records of its production actually come from Ireland, so maybe they have the right to insist on it being spelled with an 'e'.
Confesses I was too lazy too go check it out!!

Ah.... I see the Irish version. Understandable it's with an 'e'.....they'd all have been too drunk to realise the error of their ways!!
