You definitely need to start with a recent season so you know how the show works now, but the earlier seasons are just as important afterwards

Start with Cagayan cause that's the best recent season and then watch from the start.

SJDS is a better recent season than Cagayan tho (I love both)

That's not true at all. I started in order and grasped the format pretty quickly, plus it was better to see how the game evolves from start to finish rather thank knowing how it is now, then seeing it how was then, then back to knowing how it is now again etc.

This exactly. *SPOILER'ISH* The problem with watching from the latest is that if you go from a season full of idols and messy blindsides like Cagayan, or an all stars season where everyone already has developed and studied the gameplay like HvV, or a messy dramz season like SJDS to a classic season, you will consider it dull and uninteresting. Meanwhile when you watch from the start you appreciate the classic atmosphere and the developement of gameplay way more.
