Well her death was part of the story, it was a consequence of Thanos chasing his dream. It also had effects on other people, like the other Guardians. Starlord flipped out, and stopped his allies from being able to take the gauntlet.
The ash-deaths were the result of a "spell". If someone got the gauntlet, and used it to "undo everything it has done so far", the ash-deaths would be reversed, but Gamora's wouldn't, as she was killed physically, not magically. There's also the fact the ash deaths were more of a cliffhanger than a plotpoint, as we're wondering if/how they will be resolved for the next movie(s). Gamora's death was something to move the plot of this movie along.
