In the first week she was holding up her own claim of not being two faced because she was saying stuff to peoples faces.

Week two that claim started to fall apart when she was shown bitching behind peoples backs and not saying anything to their face.

She isn't being sarcastic. She's expecting Evelyn to follow the rules when she doesn't follow them herself.

Just like she feels perfectly justified in holding a grudge against Evelyn and Laura for talking about her friends but thinks Jayne's a demon ( for holding a grudge) even though she was personally attacked by Natalie.
