Nosferatu both the 1922 (Max Schreck) and 1979 (Klaus Klinski) versions. Creepy as hell. Also the 1992 Dracula with Gary Oldman - truly evil.

That was scary when that thing first appeared I was thinking like holy sh**. The only two things I can think of that come close to this jump out of the seat moment are the ending of Wait Until Dark when the man jumps out of nowhere and, the best one of all, the ending to Friday the 13th when baby Jason jumps out of the water.
