...I know that we’ve had this before but...what would be a signature dish that you’re most proud of...?...(...and you like eating most...)...

I love making a Chilli. I believe I do it well.

I also do a signature version of Welsh rarebit. I use egg, whole cream, mustard, Worstershire sauce and cheese. It's melt in the mouth stuff.
