Harrods makes lovely Christmas puddings. The first ones I tasted when I moved to the UK at 15, I like them. Not the one they served us at lunch in college.

Seriously though... probably a toffee apple pudding. When you say pudding I only really picture something gooey and messy, rather than, say, another dessert like a cheesecake, ice cream or trifle.

On a different wavelength... nothing beats Yorkshire puddings.
