Love a salmon risotto. Just fry up some salmon with onions, peas, bell pepper and other bits like mushroom and stuff if you like. Add enough risotto rice for however many you’re making it for, fill up the pan with vegetable stock and let the rice absorb it, add more if it’s needed. Normally done in around 30 minutes and suuuper quick!



Also often do a stir fry. Fry up some chicken with some veg, then I normally make my own sauce. I eyeball it so I don’t have measurements but you basically want 2 parts soy sauce to 1 Part honey, then add crushed garlic and ginger, and a couple teaspoons of dark brown sugar. If you like it spicy you can add some chilli flakes, if you like it smoky then add a squirt of BBQ sauce (sounds gross but it works with the flavours), or if you just want to just thicken it then a bit of ketchup.

Homemade Pesto with penne pasta

Fresh Penne
3 Tomatoes
A Bag of Basil
2 cloves of Garlic
A bag of Pine nuts
3/4s of a block of Parmesan(or vegetarian hard cheese)
Olive Oil
Salt

Toast the pine nuts

Chop the tomatoes
Chop the basil
Crush the garlic with a good shot of salt

mix together in a bowl with some Olive oil and add the pine nuts

Cook the pasta (will take 5 minutes with the fresh stuff)

Add the pasta to the bowl with the grated parmesan(or vegetarian hard cheese)

Mix all ingredients well and serve with garlic bread

Takes about 15mins and is so tasty

Wholemeal/seeded wrap, chicken, bit of mayo, some sort of flavouring (tikka, cajun, bbq etc.), loads of spinach, some crispy salad, usually some red onion.

My "wrapping" technique is flawless, they look so profesh.

i also like penne pasta, mozzarella, spicy sauce

make da pasta, pour on sauce, sprinkle on da mozza and then bake in the oven

add west indian extra hot sauce on top and some basil

can you even taste something like basil through a hot sauce? Seems like it would dominate

I make pasta, leave it in the colander, sautée mixed frozen veg and some mushrooms in the same empty pot with Italian herbs and a bit of cayenne pepper. I then add a splash of red wine and let it reduce, then add tomato paste, a bit of stock, let it reduce again, salt & pepper to taste, add the cooked pasta back into the pot. One of my favourites.

Vegetable Risotto is one of my faves just use any veg and cook risotto rice,fast easy and healthy.
drizzle of sunflower oil
1 large carrot, chopped
2 sticks celery, chopped
1 leek, chopped
1 large onion, chopped
400g arborio rice
1.6L vegetable stock
3 to 5 squeezes tomato puree

Prep:15min › Cook:40min › Ready in:55min
Heat the oil in a large pan on medium heat. Add the carrot, celery, leek and onion and cook and stir until softened.
Add the arborio rice and stir with vegetables over medium heat until the grains are coated properly. Keep stirring throughout.
When that's done, start adding the vegetable stock bit by bit, stirring between each addition and waiting for most of the stock to be absorbed before adding more.
Add the tomato puree halfway through. Keep on adding until the rice is cooked. Add the stock until the rice is ready.
Taste, and enjoy!
Tip
Make sure the risotto is not dry. Risotto has to be a bit liquidy, but it should not be runny.

...salmon, new potatoes, cherry tomatoes, asparagus...all cooked as a one pot thing with olive oil and balsamic...it really does only take minutes to put together and the oven does all of the work...some basil on as well when it’s cooked is lovely....
