They embalm most people unless they're specifically asked not to by the family. It preserves the body for the wake/funeral etc

I thought they only did that if they couldn't find a cause of death?

No, most people are embalmed because usually it's atleast 3 days after death before the body is buried/cremated and a body will start to decompose very soon after death
