I think most of it stems from hurt and defense. I don't think she's nasty just to be nasty. Like with Natasha for example, you could tell by their conversation that she actually really liked her and thought they had bonded. When Natasha then nominated her, it actually hurt her. Jenna is the type of person who for most of her life has had to be weary of those around her, and when she meets someone she starts to like and trust and then they do or say something that contradicts what Jenna thought of as the reality of their relationship - that's when the defensive anger comes in as a result of being hurt.
I just don't think she's consciously a nasty or bad person at all. She's shown a lot of wonderful sides too that we've only gotten to really see snippets of because her aggressive/bitchy side is what producers find more entertaining about her.
