Because the point of the show is that all the men are fighting over the women and vice versa.
If it had lgbt contestants, there would be hardly anyone fighting over anyone, as there would only be a small select of lesbians, a small select of gays, and a small select of straight men and straight women. It'd also mean there would be contestants that had ZERO interest in others, defeating the purpose of the show and removing a lot of potential drama [i.e. lesbians and gays]
It'd take away from everyone fighting for everyone as everyone would be split into 4 seperate categories, the cast would need to be huge for it to have that effect, and a huge cast means you know no one..
