And logically thinking, if Paedophiles could receive the death penalty, what's to stop them from killing their victims? As after all it stops anyone from knowing who they really are, and from also getting murdered by our justice system.

This is some of the logic behind giving lighter sentences for any crime that didn't end in someone's death... if you make the punishment for the crime as severe as the punishment for murder, then you MASSIVELY increase the risk that someone committing an assault will end it with killing and hiding the victim, because from their perspective there's no reason not to and they're far less likely to be caught if there's no live victim to report the crime.
