But I would expect next Sunday to be the one after this Sunday otherwise they would say this Sunday or just Sunday

depends on the time of week you ask
if it's early in the week yeah sure this sunday when it's wednesday i'd ask what you'd meant, this sunday or the sunday after if you ask me later on in the week you won't see me this sunday you'll see me next sunday, the week after this sunday.

I'd assume "the Sunday after the one coming up", because if it was the Sunday coming up, one would just say "Sunday".
