Jon Snow is the bastard son of Ned which is why he's name isn't Stark

Jon's father is Ned but his mother was not a noble or Ned's wife (Catelyn) thus not legally a Stark. That's why he is called Jon Snow. He can't inherit Winterfell even if he didn't join the Night Watch. He is technically not a Stark

He's Neds son and the other stark childrens half brother but because he was born out of wedlock, he doesn't get the name or the inheritance rights. In the North if your surname is Snow it means you're a bastard
