Veggie sushi - easy to make Salad with everything that you like (and by salad I don't mean a lame cucumber-tomato-lettuce bowl) - throw in quinoa, chickpeas, gherkins, olives, dried cranberries, nuts of all kinds, chopped almonds, lentils, cherry tomatoes, shrooms, spinach, avocado, basically the list is endless - these are my favourites anyway. You can blend mushrooms with oats and a few other ingredients, make patties and let it cook in the oven for a few minutes and you have nice burgers (better use a recipe for this one, for the right mixture). Soups - can't get easier than that - sweet potato soup, lentil soup, tomato soup - ah-mazing Polenta (when making it interesting) is really cheap and satisfying comfort food Banana/chocochips cookies - Mix 2 cups of oats, 2 ripe bananas and chopped dark chocolate (or any dry fruit of your choice); divide into about 15 cookies and off to the oven 180C for 15 minutes - the smell and the taste is lovely. The supermarkets are full of ready meals, but I'm not a fan of it, it's usually quite disappointing and it's far more enjoyable and healthy making your own food. Oh, and as much as I love fruits, avoid sour grapes who think you can't get anything delicious with veggies. They might as well go and kick cats in the streets as it's so cool and brave to exploit animals.

but good advice, exploiting animals is so not cool and so cruel one of the biggest reasons for me turning veggie myself

The replies in every vegetarian thread are so boring. Anyway there are endless options, I'll name some: - Pasta (different shapes, spaghetti, gnocchi etc) with sauce or vegetables. - Vegetable curry with rice or naan bread. - Fruit/vegetable salad (eg. banana, kale, avocado, orange, apple, berries, spinach). - Risotto (try out different versions, like banana and sultana (one of my favourites btw)). - Vegetable omelette. - Soup and garlic bread. - Margarita or veggie pizza. - Porridge/gari (gari is an African dish which is kind of similar to porridge, very healthy). Seriously, some people need to grow up and find better amusement than shouting "meat" like 6 year olds and grin like it's the best witty comeback ever (no, it's not original nor funny tbh).
