I think you make some good points here, particularly in terms of his humour being a coping mechanism for pain. I should imagine he also has some insecurities about abandonment and rejection, which might be why he has learnt not to show emotion and why he toys with people rather than showing any deeper underlying feelings.
I believe he and Henry have a genuine friendship which will last outside of BB, and I think he is aware that Henry feels more than friendship. However, Henry provides acceptance and, more importantly, security so he depends on him more than he will admit to himself.
With Matty, I do think Jordan is attracted to him - hence the flirting- but his insecurities make him pull back after he allows Matty to get too close, as he feels vulnerable. I believe that Matty is interested in more with Jordan, and has been left totally confused by the mixed messaging.
