Out of interest, did he get you to go through and sign the health and safety manual? Did he show you and explain to you about COSHH? accident and incident recording? Food handling?
If not, he's breaking the law and needs reporting. Another thing you can do is write a review. Bad reviews stick like fat to a kitchen ceiling.
