does it really matter if someone doesn't show up? Especially in a place where they're handling food, as you say.

In the UK at least, if you've had sickness or diarrhea / stomach bug it's considered a public health hazard to work with food until 48h after it stops. Are we to believe this chap didn't once have a tummy bug in several decades??
