You could always substitute the meringue with whipped cream but I don't think it would taste the same, it's best to stick to the recipe I think

..I don't know....even Delia Smith's lemon merangue pie recipe requires rather a lengthy boil
..I don't know whether Shaun's is lengthy enough..if not my advice would be to reduce the quantities
