What we see is a couple of minutes of an edited version of her, we don't know what has been said before or after that transmitted piece. It's quite clear that someone has had words with her before the edited piece.
She clearly has anger issues and baggage that she is carrying from the past and is probably the housemate that has come the furthest, Yes- she has a ways to go but has no axe to grind as what you see is what you get.

Helen is made of memory foam. Even if she has changed ever so slightly in the house, she'll simply snap back to whoever she was before as soon as she's back at home. Her journey comes with a return ticket.
I don't think Helen is "stupid", she's just emotionally stunted. She's basically a 5 year old. Can't control her temper, lashes out when criticised, applies different standards to everyone else than she does to herself, feels very little if any true remorse. Typical young child behaviour; will happily shout at, hit or grab things from another child without a second thought but if someone else does it to them? Shock! Disbelief! Outrage! How dare they!!
She never cries because she's genuinely upset about her behaviour, she cries out of frustration when she's been caught out and given a talking to.
