I will be the angel on your shoulder, don't ignore her as she will be more likely to treat you well if you respond, just say its too short notice or you have a family birthday or something that you can't get out of. Not being able to get in touch with you will probably piss her off and if you want a favour in the future she will remember this...I would.
 disclaimer ...I am not saying Josy isn't treating her boss well
