No, the only Hosts who know what's going on are the ones who welcome new guests, and even those are just programmed rather than having true sentience.
The Hosts in the park have no idea that they're not humans living real lives, they think they're as real as the guests (who they don't know are just guests in a theme park). They might be programmed to have a concept of newcomers to their town but definitely not anything regarding the true nature of Westworld. And I think when Dolores mentioned how she loves the newcomers etc she was in one of those interrogation sessions that they don't have any real recollection of anyway.

Yeah, they all have a set storyline that can change course depending on how the guests interact with them. But they can be pulled from one storyline and later repurposed as a new character (like when they mentioned that Dolores' father used to play a professor who led a cult in the desert) so another Host used to be her father and obviously now a new one does since the current one was decommissioned.
