Omelette
Saute mushroom, green onion, and red pepper in a pan with coconut oil. Salt and pepper to... crack the eggs into a bowl and whip with one Tbsp. of cold water. When the veggies are lightly cooked pour over the eggs and put a lid on it. When it gets all puffy and light... put shreaded cheese on top and fold in half.
That's how I made it last night.... mmmmm
