Medium I ask for.

Unless abroad, then I ask for welldone but this means it comes medium. Everytime I have ordered medium abroad it has came almost raw :S

I do cut the fat off though. Cannot imagine not doing that, would be gross

cutting off fat reduces the flavour dramatically

But...filet mignon has no fat on at all and the flavour is amazing

Nah, could never sit for ages trying to munch through a lump of fat.
